Perfect Prawn Cocktail

Poached prawns – the how to:

I start buy adding bay leaves, lemon slices, celery sticks, carrot chunks, butter & salt to a large pot of water.

Bring this to the boil, then turn down to a simmer and add the fresh prawns.

I devein and remove the head from the prawns – leaving tails attached.

The ‘poaching’ process will only take a few minutes.

As the prawns change colour pull them out – they will continue to cook even after being

removed from the liquid.

They should look like the below:

I like to add mine to a lettuce cup and drizzle cocktail sauce over the top – Great & easy to tray around at a party or served in the middle of the table easy to grab.
